Butter Bean Salad Recipe

Green Herb Dressing

Ingredients

25g (1 oz) parsley
15g (1/2 oz) mint
15g (1/2 oz) snipped chives
1 Clove garlic, peeled and chopped
150g (5 oz) plain low fat yogurt
120ml (4 fl oz) polyunsaturated vegetable oil
Juice of 1/2 lemon
Salt
Freshly ground black pepper

Preparation

Rinse the bunches of parsley and mint under running water and pat dry. Remove the stalks and place the leaves in a blender with the remaining ingredients, seasoning with 1/2 teaspoon salt and 1/4 teaspoon freshly ground black pepper. Blend for 2 to 3 minutes. Store in an airtight container in the refrigerator. Shake well to blend before serving.
Makes 300ml/1/2 pint
